avocado feta salsa

i guess i’m feeling salsa-y lately. this is definitely more of a summer snack since fresh produce is more plentiful.

ingredients

2 – 3 small tomatoes, diced
1 ripe avocado – pitted, peeled and diced (save the pit)
1/4 c red onion, finely chopped
1 clove garlic, minced (i suggest using a garlic press, but it isn’t necessary)
1 tbps chopped fresh cilantro (i like to use kitchen scissors for chopping herbs, they bruise less that way)
1 tbps chopped fresh parsley
1 tbps olive oil
1 tbsp balsamic vinegar
4 ounces feta cheese, crumbled

directions:

gently stir tomatoes, avocados, onion, and garlic in a bowl.

add cilantro and parsley.

stir in olive oil and balsamic vinegar gently.

lastly, add feta and stir carefully.

set avocado pit on top, then cover. the pit will help keep the avocado from turning brown. chill for a few hours, then take the pit out before serving. garnish with a sprig or two of parsley. serve with corn chips.

black bean and corn salsa

a super quick and easy party snack which mary was nice enough to share. the ingredient amounts need not be exact. just eyeball them.

to make a party sized batch:

2 can mexican corn (fiesta corn)
2 can black beans, rinsed
1 green pepper, chopped
1 red pepper, chopped
3 – 4 green onions, chopped
1 packet italian dressing (or garlic powder, sea salt and pepper instead)
1/4 c. olive oil
1/8 c. balsamic vinegar

mix ingredients. chill for at least an hour. serve with with corn chips.
